2 Recipes

Shocking post title, I know!  I don't cook much or that well.  However, today I have two recipes to share.  Brace yourself!  (Could this be a big change coming in 2013?  Doubtful.  Quite doubtful!)

Recipe #1-  Black Eyed Pea Soup

(K sent this to me.  I think she found it on a crock pot blog, and it is delicious.)

1 pound black eyed peas  (soak overnight)
1 pound spicy sausage-  chopped  (I used a smoked sausage link.)
6 cups of chicken broth --low fat and low sodium
1 yellow onion- diced
1 cup carrots- diced
1 cup celery- diced
4 cloves of garlic- diced  (I used the minced that comes in the jar-1 tsp.)
1/2 tsp. Italian seasoning
1 tsp. salt
Tobasco sauce (can be added to individual bowls)
(OK. True confessions.  It called for 1 tsp. pepper.  I hate pepper, so I left it out.  And I didn't tell the Mr., and now he knows.  Sorry Mr.  You regret letting me cook now, don't you?)

After draining the soaking beans/peas, add all of the above to your crock pot and cook on low for 6-8 hours.  Before serving, take out a cup of beans and use a hand mixer or blender to mash them fine.  When you add them back to the soup, they will add a creamier thickness to the broth.  That's it.  Super easy and delicious!  A new Easy Street favorite.


This second recipe will knock your socks off!

Mrs. E's Peppermint Hot Chocolate

1 packet of instant hot chocolate mix (choose your own brand!)
1 cup of hot water
10-12 (OK. 15-20) pink peppermint mini marshmallows

Mix the hot chocolate and water, and stir until well blended.  Add the marshmallows and stir until they melt slightly.  This makes a tasty mint chocolate drink to warm you on these cold evenings.  Quite a gourmet, aren't I?

Genius.  Sheer genius.  I'm pretty sure the cooking shows are going to be calling soon for this hot chocolate recipe.  Especially if they see my handy dandy little hot drink set up.
And there you have it.  Two recipes from the non-cooking Mrs. E.  (Don't get used to it.)

I just might have to try that black-eyed pea recipe. Careful - you just might like cooking yet! And isn't it amazing how many different kinds of marshmallows there are these days? Crazy!

You are really introducing me to some "bad habits"! First it was Nutella (which I can't buy because I eat the entire container very quickly), then Arnold Palmers, now peppermint marshmallows in hot chocolate. Thank you very much- I love them all! BJB

I have never heard of peppermint marshmallows....sounds great!
